Nothing tells us it’s late summer like the sight of wild blackberry bushes, lining the hedgerows around
Riversdown. This week our students have enjoyed picking this fruit that is very common in the UK, but is rare and expensive in places like Latin America. We have enjoyed eating the raw fruit at breakfast, and the traditional blackberry and apple crumble at dinner. Not wanting this year’s huge crop to be wasted,
Michaela from the Czech Republic, agreed to make some Riversdown jam. Cooking blackberries with sugar transforms them into a delicious jam (note marmalade is only made with citrus fruits). This will be a treat for future students to enjoy and a sweet reminder of Riversdown.
